Breakfast Burrito Recipe
- 2 large eggs
- 1/4 cup diced onion
- 1/4 cup diced green bell pepper
- 2 slices bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup salsa
- 2 flour tortillas
- salt and pepper to taste
Instructions
- Whisk eggs in a bowl and season with salt and pepper.
- In a skillet over medium heat, cook onions and peppers until tender.
- Add bacon crumbles and pour in the eggs. Scramble until cooked.
- Place tortillas on serving plates and spoon egg mixture on top of each.
- Sprinkle cheese on top of eggs, followed by salsa.
- Roll up tortillas burrito-style.
