Avocado Toast with Poached Egg Recipe
This breakfast recipe is perfect for avocado lovers!
Ingredients:
- 1 ripe avocado
- 2 slices of bread
- 2 eggs
- 1 tbsp of vinegar
- Salt and pepper
- Chili flakes (optional)
Instructions:
- Toast the bread slices until golden brown.
- Cut the avocado in half and remove the pit.
- Scoop the avocado flesh into a bowl and mash with a fork.
- Season with salt and pepper to taste.
- In a medium-sized pot, bring water to a boil then reduce the heat to low.
- Add 1 tbsp vinegar to the water.
- Crack one egg into a small bowl.
- Gently pour the egg into the hot water and let it cook for 3 minutes.
- Remove the egg from the water with a slotted spoon and set it on a paper towel to dry.
- Repeat the process with the other egg.
- Scoop the mashed avocado onto the toast slices.
- Top each slice with a poached egg.
- Sprinkle chili flakes on top (optional).
