Veggie Omelette Recipe
Description
This is a delicious and healthy breakfast option for vegetarians. This veggie omelette is packed with fresh vegetables and is a great source of protein to start your day on a good note.
Ingredients
- 2 eggs
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup chopped tomatoes
- 1/4 cup chopped mushrooms
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a non-stick pan over medium heat.
- Add chopped onions and cook until they become translucent.
- Add chopped bell pepper and cook until soft.
- Add chopped tomatoes and mushrooms and cook for another 2-3 minutes.
- In a separate bowl, whisk the eggs with salt and black pepper until well combined.
- Pour the egg mixture into the pan with the vegetables and cook until the bottom is golden brown.
- Flip the omelette and cook for another 2-3 minutes.
- Slide the omelette onto a plate and serve immediately.
