  1. Preheat the oven to 250°F (120°C) and line a large baking sheet with parchment paper.

  3. In a medium saucepan, melt the butter, brown sugar, corn syrup, and salt over medium heat. Stir occasionally until fully melted and combined.
  4. Add the baking soda and vanilla extract to the caramel mixture and stir well.
  5. Pour the caramel mixture over the popcorn and stir until all the popcorn is coated evenly.
  6. Transfer the popcorn to the lined baking sheet and spread it out in an even layer.
  7. Bake the popcorn for 45 minutes, stirring every 15 minutes to ensure it cooks evenly.
  8. Remove the popcorn from the oven and let it cool completely before breaking it up into bite-sized pieces.
