Caramel Popcorn Recipe

Ingredients
- 1 cup popcorn kernels
- 1 cup unsalted butter
- 2 cups brown sugar
- 1/2 cup corn syrup
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 250°F (120°C) and line a large baking sheet with parchment paper.
- Pop the popcorn kernels on the stove or using a popcorn machine and place them in a large bowl. Remove any unpopped kernels or hulls.
- In a medium saucepan, melt the butter, brown sugar, corn syrup, and salt over medium heat. Stir occasionally until fully melted and combined.
- Add the baking soda and vanilla extract to the caramel mixture and stir well.
- Pour the caramel mixture over the popcorn and stir until all the popcorn is coated evenly.
- Transfer the popcorn to the lined baking sheet and spread it out in an even layer.
- Bake the popcorn for 45 minutes, stirring every 15 minutes to ensure it cooks evenly.
- Remove the popcorn from the oven and let it cool completely before breaking it up into bite-sized pieces.
