Strawberry Shortcake Recipe
Ingredients:
- 2 cups all-purpose flour 🌾
- 1/4 cup granulated sugar 🍚
- 1 tablespoon baking powder 🥄
- 1/2 teaspoon baking soda 🥄
- 1/2 teaspoon salt 🧂
- 1/2 cup unsalted butter, chilled and cubed 🧈
- 2/3 cup whole milk 🥛
- 1 large egg 🥚
- 1 teaspoon vanilla extract 🌿
- 3 cups fresh strawberries, hulled and sliced 🍓
- 1/4 cup granulated sugar 🍚
- Whipped cream, for serving 🍦
- Mint leaves, for garnish 🍃
Instructions:
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Add the butter and use a pastry blender or your fingers to cut the butter into the flour mixture until it looks like coarse crumbs.
- In a separate bowl, whisk together the milk, egg, and vanilla.
- Add the wet ingredients to the flour mixture and stir until just combined.
- Spoon the batter evenly into a greased 9x13 inch baking dish and bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- While the cake is baking, mix together the sliced strawberries and sugar in a medium bowl and set aside.
- Once the cake has cooled, cut into squares and top with the strawberry mixture and a dollop of whipped cream. Garnish with mint leaves and serve.
