Strawberry Shortcake Recipe

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the butter and use a pastry blender or your fingers to cut the butter into the flour mixture until it looks like coarse crumbs.
  4. In a separate bowl, whisk together the milk, egg, and vanilla.
  5. Add the wet ingredients to the flour mixture and stir until just combined.
  6. Spoon the batter evenly into a greased 9x13 inch baking dish and bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  7. While the cake is baking, mix together the sliced strawberries and sugar in a medium bowl and set aside.
  8. Once the cake has cooled, cut into squares and top with the strawberry mixture and a dollop of whipped cream. Garnish with mint leaves and serve.
