Instructions

  1. Preheat oven to 350°F.
  2. Line a 9x13-inch baking dish with parchment paper.
  3. In a large bowl, mix 2 cups flour and 1/2 cup powdered sugar.
  4. Cut in butter until mixture forms coarse crumbs.
  5. Press mixture evenly into prepared baking dish.
  6. Bake crust for 15-20 minutes, until lightly golden brown.
  7. In a separate bowl, whisk together eggs, granulated sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.
  8. Pour mixture over warm crust.
  9. Bake for 20-25 minutes or until mixture is set and the edges are lightly golden brown.
  10. Cool completely in pan on a wire rack.
  11. Dust with powdered sugar before cutting into squares.
