Lemon Bars
Ingredients
- 1 cup unsalted butter
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 2/3 cup freshly squeezed lemon juice
- zest of 1 lemon
- powdered sugar for dusting
Instructions
- Preheat oven to 350°F.
- Line a 9x13-inch baking dish with parchment paper.
- In a large bowl, mix 2 cups flour and 1/2 cup powdered sugar.
- Cut in butter until mixture forms coarse crumbs.
- Press mixture evenly into prepared baking dish.
- Bake crust for 15-20 minutes, until lightly golden brown.
- In a separate bowl, whisk together eggs, granulated sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.
- Pour mixture over warm crust.
- Bake for 20-25 minutes or until mixture is set and the edges are lightly golden brown.
- Cool completely in pan on a wire rack.
- Dust with powdered sugar before cutting into squares.
