Eggplant Parmesan Recipe

  2. Cut the eggplants into 1/2-inch-thick rounds.
  3. Set up three bowls: one for the flour, one for the beaten eggs, and one for the breadcrumbs.
  4. Dip each eggplant round in the flour, then the egg, and then the breadcrumbs, making sure to coat each round evenly.
  5. Place the coated eggplant rounds onto a baking sheet and drizzle with olive oil.
  6. Bake for 20-25 minutes or until golden brown.
  7. In a baking dish, layer the eggplant rounds with marinara sauce, Parmesan cheese, and mozzarella cheese. Repeat until all the eggplant and cheese is used up.
