Eggplant Parmesan is a delicious vegetarian dish that is perfect for any occasion!
Ingredients:
- 2 medium eggplants 🍆
- 2 cups of breadcrumbs 🍞
- 1 cup of all-purpose flour
- 3 eggs 🥚
- 1 cup of grated Parmesan cheese 🧀
- 4 cups of marinara sauce 🍅
- 2 cups of shredded mozzarella cheese 🧀
- 1/4 cup of chopped fresh basil 🌿
- 1/4 cup of olive oil
Instructions:
- Preheat oven to 375°F (190°C).
- Cut the eggplants into 1/2-inch-thick rounds.
- Set up three bowls: one for the flour, one for the beaten eggs, and one for the breadcrumbs.
- Dip each eggplant round in the flour, then the egg, and then the breadcrumbs, making sure to coat each round evenly.
- Place the coated eggplant rounds onto a baking sheet and drizzle with olive oil.
- Bake for 20-25 minutes or until golden brown.
- In a baking dish, layer the eggplant rounds with marinara sauce, Parmesan cheese, and mozzarella cheese. Repeat until all the eggplant and cheese is used up.
- Bake for an additional 20-25 minutes or until the cheese is melted and bubbly.
- Garnish with fresh basil and serve hot.
