Zucchini and Corn Fritters Recipe

Instructions:

  1. Place the grated zucchini in a colander and sprinkle with a pinch of salt. Let drain for 10 minutes then squeeze out as much excess liquid as possible.
  2. In a large bowl, combine zucchini, corn, green onions, and garlic.
  3. In a separate bowl, whisk together the flour, baking powder, salt, paprika, and cumin. Gradually stir in the egg and milk until well combined.
  4. Pour the flour mixture over the vegetable mixture and stir until well combined.
  5. In a nonstick pan, heat the olive oil over medium heat.
  6. Spoon 2 tablespoons of the batter into the pan, then flatten it slightly with a spatula.
  7. Cook for 2-3 minutes on each side, or until golden brown and crispy.
  8. Remove from pan, and drain on paper towels.
  9. Repeat with remaining batter.

Serve hot with your preferred dipping sauce.
