Zucchini and Corn Fritters Recipe
- 1 large zucchini, coarsely grated
- 1 cup corn kernels
- 2 green onions, thinly sliced
- 2 garlic cloves, finely chopped
- 1/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp paprika
- 1/4 tsp cumin
- 1 egg, lightly beaten
- 2 tbsp milk
- 2 tbsp olive oil
Instructions:
- Place the grated zucchini in a colander and sprinkle with a pinch of salt. Let drain for 10 minutes then squeeze out as much excess liquid as possible.
- In a large bowl, combine zucchini, corn, green onions, and garlic.
- In a separate bowl, whisk together the flour, baking powder, salt, paprika, and cumin. Gradually stir in the egg and milk until well combined.
- Pour the flour mixture over the vegetable mixture and stir until well combined.
- In a nonstick pan, heat the olive oil over medium heat.
- Spoon 2 tablespoons of the batter into the pan, then flatten it slightly with a spatula.
- Cook for 2-3 minutes on each side, or until golden brown and crispy.
- Remove from pan, and drain on paper towels.
- Repeat with remaining batter.
Serve hot with your preferred dipping sauce.
