Vegetarian Chili Recipe

This vegetarian chili recipe is packed with protein and flavor. It's a great meal for a cold night, and it's easy to make!

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and red bell pepper, and cook until softened.
  3. Add the garlic and cook for another minute.
  4. Add in the cumin, chili powder, smoked paprika, and a pinch of salt and pepper. Stir to combine.
  5. Add the black beans, kidney beans, chickpeas, diced tomatoes, and vegetable broth to the pot. Stir to combine.
  6. Simmer the chili for 20-30 minutes, stirring occasionally.
  7. Taste and adjust seasoning as needed.
  8. Serve hot.

If you want to add some extra heat to your chili, you can stir in some hot sauce or add some diced jalapeños. This chili also goes great with some shredded cheddar cheese and a dollop of sour cream on top!
