Vegetarian Chili Recipe

This vegetarian chili recipe is packed with protein and flavor. It's a great meal for a cold night, and it's easy to make!
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can chickpeas, drained and rinsed
- 2 cans diced tomatoes
- 1 cup vegetable broth
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the onion and red bell pepper, and cook until softened.
- Add the garlic and cook for another minute.
- Add in the cumin, chili powder, smoked paprika, and a pinch of salt and pepper. Stir to combine.
- Add the black beans, kidney beans, chickpeas, diced tomatoes, and vegetable broth to the pot. Stir to combine.
- Simmer the chili for 20-30 minutes, stirring occasionally.
- Taste and adjust seasoning as needed.
- Serve hot.
If you want to add some extra heat to your chili, you can stir in some hot sauce or add some diced jalapeños. This chili also goes great with some shredded cheddar cheese and a dollop of sour cream on top!
