Lemon Garlic Scallops Recipe

Ingredients

  • 1 pound scallops
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/4 cup white wine
  • 2 tablespoons lemon juice
  • 1/4 cup chicken broth
  • 1 tablespoon chopped parsley
  • Lemon wedges and additional chopped parsley for serving

Instructions

  1. Rinse the scallops and pat them dry with paper towels.
  2. In a shallow dish, combine the flour, salt, and black pepper.
  3. Dredge the scallops in the flour mixture, shaking off any excess.
  4. In a large skillet, melt the butter and olive oil over medium-high heat.
  5. Working in batches, add the scallops to the skillet and cook for 2-3 minutes per side or until golden brown and cooked through.
  6. Remove the scallops from the skillet and place them on a plate. Cover with foil to keep warm.
  7. Add the minced garlic to the skillet and cook for 1 minute, stirring constantly.
  8. Add the white wine and lemon juice to the skillet and stir to combine, scrapping any browned bits from the bottom of the pan.
  9. Add the chicken broth, bring to a simmer, and cook for 2-3 minutes or until the sauce has reduced by half.
  10. Remove the skillet from heat and stir in the chopped parsley.
  11. Serve the scallops with the lemon garlic sauce, additional chopped parsley, and lemon wedges.
