Lemon Garlic Scallops Recipe
Ingredients
- 1 pound scallops
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1/4 cup white wine
- 2 tablespoons lemon juice
- 1/4 cup chicken broth
- 1 tablespoon chopped parsley
- Lemon wedges and additional chopped parsley for serving
Instructions
- Rinse the scallops and pat them dry with paper towels.
- In a shallow dish, combine the flour, salt, and black pepper.
- Dredge the scallops in the flour mixture, shaking off any excess.
- In a large skillet, melt the butter and olive oil over medium-high heat.
- Working in batches, add the scallops to the skillet and cook for 2-3 minutes per side or until golden brown and cooked through.
- Remove the scallops from the skillet and place them on a plate. Cover with foil to keep warm.
- Add the minced garlic to the skillet and cook for 1 minute, stirring constantly.
- Add the white wine and lemon juice to the skillet and stir to combine, scrapping any browned bits from the bottom of the pan.
- Add the chicken broth, bring to a simmer, and cook for 2-3 minutes or until the sauce has reduced by half.
- Remove the skillet from heat and stir in the chopped parsley.
- Serve the scallops with the lemon garlic sauce, additional chopped parsley, and lemon wedges.
