Blackened Catfish
Ingredients:
- 4 catfish fillets
- 2 tablespoons paprika
- 1 tablespoon salt
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 cup butter, melted
Instructions:
- Preheat oven to 375°F (190°C).
- Mix together paprika, salt, garlic powder, onion powder, cayenne pepper, dried thyme, and dried oregano in a small bowl.
- Brush melted butter on both sides of each catfish fillet.
- Sprinkle the spice mixture evenly on both sides of each fillet.
- Heat a large cast iron skillet over high heat until smoking hot.
- Add the catfish fillets to the skillet and cook for 2-3 minutes on each side until blackened.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes until the fish is cooked through.
- Remove from oven and let cool for a couple of minutes before serving.
