Blackened Catfish

  1. Preheat oven to 375°F (190°C).
  2. Mix together paprika, salt, garlic powder, onion powder, cayenne pepper, dried thyme, and dried oregano in a small bowl.
  3. Brush melted butter on both sides of each catfish fillet.
  4. Sprinkle the spice mixture evenly on both sides of each fillet.
  5. Heat a large cast iron skillet over high heat until smoking hot.
  6. Add the catfish fillets to the skillet and cook for 2-3 minutes on each side until blackened.
  7. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the fish is cooked through.
  8. Remove from oven and let cool for a couple of minutes before serving.
