Ingredients:
- 400g fettuccine pasta
- 1 tbsp olive oil
- 2 tbsp butter
- 1 onion, chopped
- 3 garlic cloves, minced
- 500g mushrooms, sliced
- 2 tbsp fresh thyme, chopped
- 1 cup chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Grated parmesan cheese to serve
Instructions:
- Cook the fettuccine pasta according to the package instructions. Reserve 1 cup of pasta water.
- In a large pan, heat the olive oil and 1 tablespoon of butter over medium heat.
- Once the butter is melted, add the chopped onion, minced garlic, and sauté until the onion is translucent.
- Add the sliced mushrooms and fresh thyme, and sauté until the mushrooms are browned and the water has evaporated.
- Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 5 minutes.
- Add the heavy cream and remaining butter, and stir until the butter is melted.
- Simmer the sauce for an additional 5 minutes, until it has thickened slightly.
- Season with salt and pepper to taste.
- Add the cooked pasta and toss to coat the pasta with the sauce, adding reserved pasta water to loosen the sauce if needed.
- Serve hot, topped with grated parmesan cheese.
