Mushroom and Thyme Fettuccine

Ingredients:

Instructions:

  1. Cook the fettuccine pasta according to the package instructions. Reserve 1 cup of pasta water.
  2. In a large pan, heat the olive oil and 1 tablespoon of butter over medium heat.
  3. Once the butter is melted, add the chopped onion, minced garlic, and sauté until the onion is translucent.
  4. Add the sliced mushrooms and fresh thyme, and sauté until the mushrooms are browned and the water has evaporated.
  5. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 5 minutes.
  6. Add the heavy cream and remaining butter, and stir until the butter is melted.
  7. Simmer the sauce for an additional 5 minutes, until it has thickened slightly.
  8. Season with salt and pepper to taste.
  9. Add the cooked pasta and toss to coat the pasta with the sauce, adding reserved pasta water to loosen the sauce if needed.
  10. Serve hot, topped with grated parmesan cheese.
