Carbonara Linguine
Mouthwatering Carbonara Linguine recipe that will transport you straight to Italy! 🍝🇮🇹
Ingredients:
- 1 pound linguine
- 4 egg yolks
- 1 cup grated Parmesan cheese
- 1/2 cup pancetta, diced
- 3 garlic cloves, minced
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley leaves, chopped
- Salt, to taste
Instructions:
- In a large pot of salted boiling water, cook linguine until al dente. Drain, reserving 1/2 cup of pasta water.
- In a bowl, whisk together egg yolks, Parmesan cheese, and black pepper. Set aside.
- In a saucepan, cook pancetta over medium heat until crispy. Add garlic and cook for an additional minute.
- Add cooked pasta to the saucepan with pancetta and garlic. Toss until the pasta is coated in the pancetta fat.
- Remove the saucepan from heat and add the egg mixture. Toss until the pasta is coated in the sauce. If the sauce is too thick, add the reserved pasta water a little at a time while continuing to toss until the desired consistency is reached.
- Season with salt to taste.
- Serve hot with chopped fresh parsley as garnish.
