Carbonara Linguine

Mouthwatering Carbonara Linguine recipe that will transport you straight to Italy! 🍝🇮🇹

  1. In a large pot of salted boiling water, cook linguine until al dente. Drain, reserving 1/2 cup of pasta water.
  2. In a bowl, whisk together egg yolks, Parmesan cheese, and black pepper. Set aside.
  3. In a saucepan, cook pancetta over medium heat until crispy. Add garlic and cook for an additional minute.
  4. Add cooked pasta to the saucepan with pancetta and garlic. Toss until the pasta is coated in the pancetta fat.
  5. Remove the saucepan from heat and add the egg mixture. Toss until the pasta is coated in the sauce. If the sauce is too thick, add the reserved pasta water a little at a time while continuing to toss until the desired consistency is reached.
  6. Season with salt to taste.
  7. Serve hot with chopped fresh parsley as garnish.
