Thai Beef Salad Recipe
- 1 lb. flank steak, grilled or broiled
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup shredded carrots
- 1/2 cup chopped cucumber
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 1/4 cup chopped basil
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 2 tablespoons brown sugar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1-2 Thai chili peppers, thinly sliced (optional)
- Salt and pepper, to taste
Instructions:
- Season the flank steak with salt and pepper and grill or broil to desired doneness. Let rest for 10 minutes, then slice thinly.
- In a large bowl, combine the mixed greens, cherry tomatoes, red onion, shredded carrots, chopped cucumber, cilantro, mint, and basil.
- In a small bowl, whisk together the fish sauce, lime juice, brown sugar, minced garlic, minced ginger, and Thai chili peppers (if using).
- Pour the dressing over the salad and toss to combine.
- Top the salad with the sliced steak and serve.
