Quinoa Salad Recipe
Ingredients:
- 1 cup uncooked quinoa
- 2 cups water
- 1 red bell pepper, chopped
- 1/4 red onion, chopped
- 1 cucumber, chopped
- 1/2 cup cherry tomatoes, halved
- 1 avocado, diced
- 1 can chickpeas, drained and rinsed
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions:
- Rinse quinoa thoroughly in a fine-mesh strainer and drain.
- In a medium-sized pot, bring 2 cups of water to a boil. Add quinoa and reduce heat to low. Simmer for about 15-20 minutes, or until quinoa has absorbed all the water and is tender.
- Remove from heat and let it cool down to room temperature.
- In a large bowl, combine quinoa, red bell pepper, red onion, cucumber, cherry tomatoes, avocado, chickpeas, parsley, and cilantro.
- In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Refrigerate the salad for at least 30 minutes before serving. Enjoy!
