Quinoa Salad Recipe

  1. Rinse quinoa thoroughly in a fine-mesh strainer and drain.
  2. In a medium-sized pot, bring 2 cups of water to a boil. Add quinoa and reduce heat to low. Simmer for about 15-20 minutes, or until quinoa has absorbed all the water and is tender.
  3. Remove from heat and let it cool down to room temperature.
  4. In a large bowl, combine quinoa, red bell pepper, red onion, cucumber, cherry tomatoes, avocado, chickpeas, parsley, and cilantro.
  5. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Refrigerate the salad for at least 30 minutes before serving. Enjoy!
