Greek Salad Recipe
Ingredients:
- 2 large cucumbers, chopped
- 3-4 medium tomatoes, chopped
- 1 small red onion, thinly sliced
- 1/2 green pepper, chopped
- 1/2 red pepper, chopped
- 1/2 cup Kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh oregano, chopped
- 3 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- Salt and freshly ground black pepper, to taste
- Fresh parsley or mint leaves, chopped for garnish
Instructions:
- In a large salad bowl, combine the cucumbers, tomatoes, red onion, green and red pepper, and Kalamata olives.
- Sprinkle the crumbled feta cheese and fresh oregano over the top.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper. Drizzle the dressing over the salad, and toss gently to combine.
- Garnish with fresh parsley or mint leaves.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
