  1. In a large salad bowl, combine the cucumbers, tomatoes, red onion, green and red pepper, and Kalamata olives.
  2. Sprinkle the crumbled feta cheese and fresh oregano over the top.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper. Drizzle the dressing over the salad, and toss gently to combine.
  4. Garnish with fresh parsley or mint leaves.
  5. Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
