Carrot Ginger Soup

This warm and comforting soup is perfect for a cold day. The sweetness of the carrots and the spiciness of the ginger make for a delicious combination.

  1. In a large pot, sauté the onions until they are translucent.
  2. Add the sliced carrots and ginger and sauté for another 5 minutes.
  3. Add the broth and bring the mixture to a boil. Reduce heat and let simmer until the carrots are soft, about 20 minutes.
  4. Using a blender or immersion blender, puree the soup until it is smooth.
  5. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
  6. Serve hot and enjoy!

For a creamier consistency, add more heavy cream. For an extra kick of spice, add cayenne pepper or red chili flakes.
