Cauliflower Soup Recipe
Ingredients:
- 1 head cauliflower, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken or vegetable broth
- 1 cup milk (or substitute with non-dairy milk)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and minced garlic, then sauté until onions are translucent, about 5 minutes.
- Add chopped cauliflower and stir to combine.
- Pour in chicken or vegetable broth, and stir well.
- Bring the mixture to a boil, then reduce heat to low and let it simmer for about 20 minutes, or until the cauliflower is tender.
- Remove the pot from heat, and let it cool for a few minutes.
- Puree the soup in a blender until smooth.
- Pour the soup back into the pot, and add milk while stirring over low heat.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
