Spicy Chicken Tortilla Soup Recipe
Ingredients:
- 2 tablespoons of olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 jalapeño pepper, seeded and diced
- 1 tablespoon of chili powder
- 1/2 tablespoon of cumin
- 1/2 teaspoon of paprika
- 1/4 teaspoon of cayenne pepper
- 4 cups of chicken broth
- 1 can of diced tomatoes
- 1 can of corn
- 2 cups of cooked chicken, shredded
- 1 lime, juiced
- Salt and pepper to taste
- 1/4 cup of cilantro, chopped
- Tortilla strips, shredded cheese, and avocado for toppings
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and peppers. Cook for 5 minutes or until the vegetables are tender.
- Add the chili powder, cumin, paprika, and cayenne pepper. Stir well.
- Pour in the chicken broth, diced tomatoes, and corn. Bring to a boil.
- Add the cooked chicken, lime juice, and salt and pepper to taste. Cook for 10 minutes.
- Stir in the cilantro and remove from heat.
- Serve with tortilla strips, shredded cheese, and avocado on top.
