Potato Leek Soup

This comforting and hearty soup is perfect for a chilly day. It's made with simple and inexpensive ingredients and can be served as a main course or an appetizer.
Ingredients:
- 4 tablespoons butter
- 4 leeks, white and light green parts only, thinly sliced
- 4 garlic cloves, minced
- 4 potatoes, peeled and chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions:
- In a large pot, melt the butter over medium heat.
- Add the leeks and garlic and cook, stirring occasionally, until soft and fragrant.
- Add the potatoes and broth and bring to a boil.
- Reduce the heat and simmer until the potatoes are tender, about 20 minutes.
- Using an immersion blender or transferring to a blender, blend until smooth.
- Stir in the heavy cream and season with salt and black pepper to taste.
- Simmer for an additional 5 minutes, then remove from heat.
- Serve hot and garnish with fresh parsley.
This soup can also be garnished with crispy bacon, croutons, or grated cheese.
