Potato Leek Soup

This comforting and hearty soup is perfect for a chilly day. It's made with simple and inexpensive ingredients and can be served as a main course or an appetizer.

  1. In a large pot, melt the butter over medium heat.
  2. Add the leeks and garlic and cook, stirring occasionally, until soft and fragrant.
  3. Add the potatoes and broth and bring to a boil.
  4. Reduce the heat and simmer until the potatoes are tender, about 20 minutes.
  5. Using an immersion blender or transferring to a blender, blend until smooth.
  6. Stir in the heavy cream and season with salt and black pepper to taste.
  7. Simmer for an additional 5 minutes, then remove from heat.
  8. Serve hot and garnish with fresh parsley.

This soup can also be garnished with crispy bacon, croutons, or grated cheese.
