Butternut Squash Soup Recipe
Ingredients
- 1 large butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp ground ginger
- 1/2 cup heavy cream
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic and sauté until onions are translucent.
- Add butternut squash and stir to combine.
- Add chicken or vegetable broth, cinnamon, nutmeg, and ginger.
- Bring to a boil and then reduce heat to low.
- Cover and simmer for 20-25 minutes or until squash is tender.
- Use an immersion blender to blend the soup until smooth.
- Stir in heavy cream and salt and pepper to taste.
- Simmer the soup for five more minutes to allow flavors to meld.
- Serve hot and enjoy!
