Butternut Squash Soup Recipe

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic and sauté until onions are translucent.
  3. Add butternut squash and stir to combine.
  4. Add chicken or vegetable broth, cinnamon, nutmeg, and ginger.
  5. Bring to a boil and then reduce heat to low.
  6. Cover and simmer for 20-25 minutes or until squash is tender.
  7. Use an immersion blender to blend the soup until smooth.
  8. Stir in heavy cream and salt and pepper to taste.
  9. Simmer the soup for five more minutes to allow flavors to meld.
  10. Serve hot and enjoy!
