Chicken Noodle Soup Recipe 🍜
Soup is the perfect comfort food for a cold and dreary day. This chicken noodle soup recipe is easy to make and will warm your soul.
Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 2 medium carrots, peeled and diced
- 3 celery stalks, diced
- 6 cups chicken broth
- 2 cups cooked and shredded chicken
- 2 cups egg noodles
- 2 tablespoons fresh parsley, chopped
- Salt and pepper, to taste
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and cook until it becomes translucent, about 5 minutes.
- Add the minced garlic, diced carrots, and diced celery. Cook for another 5-7 minutes or until the vegetables are tender.
- Pour in the chicken broth and bring to a boil. Reduce heat to low and let it simmer for 10-15 minutes.
- Add in the cooked and shredded chicken and egg noodles. Simmer for another 10-12 minutes, or until the noodles are al dente.
- Add salt and pepper to taste.
- Serve hot with a sprinkle of fresh parsley on top.
