Italian Wedding Soup Recipe

  1. In a large pot, brown the Italian sausage, breaking it up into small pieces while it cooks.
  2. Add the chopped onion and minced garlic, and sautΓ© until the onion is translucent.
  3. Add the chicken broth, water, and white wine, and bring to a boil.
  4. Add the sliced carrots, dried basil, and dried oregano, and simmer for 10 minutes.
  5. Add the chopped spinach and pasta, and simmer for an additional 10 minutes, or until the pasta is cooked.
  6. Season with salt and pepper to taste, and stir in the chopped parsley.
  7. Serve hot with freshly grated Parmesan cheese on top.
