Ingredients:
- 1 pound of Italian sausage
- 1 cup of finely chopped onion
- 2 cloves of minced garlic
- 5 cups of chicken broth
- 1/2 cup of water
- 1/2 cup of dry white wine
- 1 cup of thinly sliced carrots
- 1/2 teaspoon of dried basil
- 1/2 teaspoon of dried oregano
- 1 cup of chopped fresh spinach
- 1 cup of small pasta (such as orzo)
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste
- Freshly grated Parmesan cheese for garnish

Instructions:
- In a large pot, brown the Italian sausage, breaking it up into small pieces while it cooks.
- Add the chopped onion and minced garlic, and sautΓ© until the onion is translucent.
- Add the chicken broth, water, and white wine, and bring to a boil.
- Add the sliced carrots, dried basil, and dried oregano, and simmer for 10 minutes.
- Add the chopped spinach and pasta, and simmer for an additional 10 minutes, or until the pasta is cooked.
- Season with salt and pepper to taste, and stir in the chopped parsley.
- Serve hot with freshly grated Parmesan cheese on top.
