Creamy Tomato Soup Recipe
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic, and sauté until softened.
- Pour in the crushed tomatoes and vegetable broth, and bring it to a simmer.
- Allow it to cook for about 10 minutes.
- Remove the soup from heat and let it cool slightly.
- When it's cooled, blend it in a blender until it is smooth.
- Return the soup to the pot and stir in the heavy cream and chopped basil leaves.
- Season with salt and pepper to taste.
- Simmer for another 5 minutes until it’s heated through.
- Serve hot and enjoy!
