Ingredients:
- 1 large cucumber, peeled and grated
- 1 teaspoon salt
- 1 1/2 cups Greek yogurt
- 2 tablespoons chopped fresh dill
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Pinch of black pepper
Instructions:
- Place the grated cucumber in a colander and sprinkle with salt. Let it sit for 10-15 minutes to drain excess water.
- In a bowl, combine Greek yogurt, dill, garlic, lemon juice, olive oil, and black pepper.
- Add in the grated cucumber and mix well.
- Cover and refrigerate the dip for at least 1 hour before serving.
- When ready to serve, drizzle some olive oil over the top and sprinkle with additional fresh dill.
