Japanese Ramen Soup

  1. In a large pot, bring the chicken or vegetable broth to a boil.
  2. While waiting for the broth to boil, cook the ramen noodles according to package instructions.
  3. In a separate pan, heat the vegetable oil and sesame oil over medium heat.
  4. Add the minced garlic and ginger and sauté for 1-2 minutes until fragrant.
  5. Add the sliced shiitake mushrooms and sauté for an additional 2-3 minutes.
  6. Add the sautéed mushrooms, soy sauce, and optional miso paste to the boiling broth.
  7. Reduce heat and let the broth simmer for 5-10 minutes to allow the flavors to blend.
  8. Divide the cooked ramen noodles among four bowls.
  9. Pour the hot broth over the noodles.
  10. Garnish each bowl with a soft boiled egg, sliced green onions, bean sprouts, bamboo shoots, and nori sheets.
  11. Enjoy!
