Instructions

  1. Dissolve the yeast and sugar in warm milk in a mixing bowl. Let it sit for 5-10 minutes until it becomes frothy.
  2. Add flour and salt to the bowl and mix until the dough comes together.
  3. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
  4. Roll out the cold dough into a rectangle and place the cold butter in the center.
  5. Wrap the dough around the butter, seal it well, and roll out the dough again into a long rectangle.
  6. Fold the dough into thirds and chill in the refrigerator for 30 minutes.
  7. Repeat steps 5-6 two more times, chilling the dough for 30 minutes in between each fold.
  8. Roll out the dough into a large rectangle and cut it into triangles.
  9. Roll each triangle from the base to the tip, creating a classic croissant shape.
  10. Place the croissants on a baking sheet, brush them with egg yolk, and let them rise for 30-60 minutes.
  11. Preheat the oven to 190°C and bake the croissants for 15-20 minutes or until they're golden brown.
  12. Remove from the oven and let the croissants cool on a wire rack before serving.

Enjoy your freshly baked French croissants with a cup of coffee or tea.
