Spicy Mexican Burritos

  1. In a large skillet, cook the ground beef over medium-high heat until browned. Drain the excess fat and set aside.
  2. In the same skillet, saute the onion and red bell pepper until soft and tender, about 5 minutes.
  3. Add the minced garlic, chili powder, cumin powder, paprika and cayenne pepper to the skillet. Cook for another 1-2 minutes.
  4. Stir in the black beans, corn, diced tomatoes and cilantro. Cook for another 5 minutes, stirring occasionally.
  5. Preheat your oven to 350°F.
  6. Take a tortilla and spoon the beef mixture onto the center of the tortilla. Add a spoonful each of cheese and salsa, and fold the bottom and then the sides of the tortilla up over the filling.
  7. Repeat with remaining tortillas and filling mixture. Place the burritos in a baking dish and cover with foil.
  8. Bake the burritos for about 15-20 minutes, or until the cheese is melted and the tortillas are slightly crispy.
  9. Serve hot with sour cream, guacamole and additional salsa, if desired.
